Brief Description / Features of the Technology:

The present utility model discloses a novel process of preparing squash puree comprising the steps of steaming of squash for 30 minutes, cooling to room temperature, peeling off the skin and cutting into cubes, grinding to attain a consistency, packing, pasteurizing the packed material. It further comprise the step of adjusting the pH using lactic acid of glucono delta lactone as acidulant.
